So I've been, like, cooking n stuff? Trader Joe's has been the organic testing grounds for some of my favorite recipes. One of them in a quinoa dish that was taught to me by Nina Rosas, chef and owner of Soul Restaurant, an organic haven in Brussels, Belgium.

Quinoa is a high protein grain so it take a while for your body to digest it. This makes for a slow and powerful energy release into your system. I adapted the meal to what I had on hand and a few taste adjustments I've added over time since Nina first taught it to me .. So I took some organic quinoa from Trader Joe's and went to town.
1 box regular quinoa
Vegetable broth
apples sliced into cubes
baby spinach
feta cheese
canned tuna (in water)
pine nuts (toasted)
olive oil to taste
I rinsed off the quinoa and then followed the directions on the box, adding two parts water to it. Then I threw two condensed vegetable broth cubes in the pot to give it some flavor. (Quinoa is quite tasteless on its own.) I let the quinoa boil while I threw some pine nuts on a skillet and toasted them a bit. (Watch them closely, it's very quick that they go from not toasted to burned.)

Then I took off the pine nuts and let them cool, and threw the canned tuna on the skillet for a little while. This gives the tuna a better, more cooked flavor.
When the quinoa was almost completely cooked, i.e. boiled down, I threw in the apples, the tuna, and the feta cheese. I waited a little bit and then threw in the baby spinach and pine nuts. I turned off the heat and poured in a little olive oil to taste.

Oh yessss......
